Aromatic Lemon Ginger Cookies Recipe

 

Ginger is a favorite in Ayurvedic cooking for its warming, sweet yet slightly bitter flavor. In moderation, it supports digestion. These cookies work well for travel if you experience motion sickness because both lemon and ginger reduce nausea. In this recipe, we use fresh ginger as it retains more moisture and potency than dried ginger. It’s also less heating for the body and mind. 

 

Augmenting and Extractive    

Serves: 8 (makes 8 Cookies)

Preparation Time: 25 minutes

 

You’ll Need:

  • 1 ½  cup spelt flour (if milling at home, use ¾ cup spelt berries)

  • 6 large dates, soaked overnight in water and chopped - reserve the soaking water and use in the recipe

  • 1+ Tbsp ghee

  • 1 Tbsp grated fresh ginger

  • ⅓ tsp mineral salt

  • ¼ tsp cinnamon 

  • 1 tsp lemon zest

  • 1 tsp vanilla extract (without alcohol)

 

Here’s How:

  1. Preheat your oven to 180°C/350°F.

  2. Combine all the ingredients and use some water from the dates to make a smooth dough. If you need more, use room temperature water. Divide into 8 balls. 

  3. Shape into cookies with your fingers into your desired shape.

  4. Bake for 15-18 minutes or until slightly golden.

 

Tips and Substitutions:

  • Option to use lime or orange zest.

  • If fresh ginger isn't available, use 1 tsp dried ginger.
