Creamy Sweet Parsnip Mash

Sometimes less is more. Here’s a simple recipe that’s full of prana and only requires a few ingredients.

All you need are some fresh parsnips, spices, and a blender. Oh, and of course, ghee! Glorious ghee!

When cooked well, until very soft, parsnips become sweeter which calms both vata and pitta. Then popping them in the blender creates a dish of creamy, soothing goodness. If you or your loved ones were never huge fans of this vegetable, this dish will very likely change your minds.

This mash goes really well with a balanced bowl with rice, chapatis, or savoury pancakes. It could also be a side dip with your meal.

Creamy Sweet Parsnip Mash

Serves: 4 people
Preparation time: 20 minutes

You'll need

  • 3 medium parsnips, peeled and chopped into 1 inch cubes

  • 1 tbsp ghee

  • ⅔ tsp salt

  • 1 tsp cinnamon

  • ½ tsp cardamom

  • 5-6 chopped mint leaves


Here's how

  1. Simmer ghee, salt, cinnamon, cardamom and a bit of mint in a small saucepan until the aroma comes up. Add the parsnips and stir.

  2. Add water, to reach about 2/3 of the parsnips' height in the pan. Cover and bring to a boil.

  3. Cook on low heat for about 15 minutes, until the parsnip chunks are very soft.

  4. Using a blender, create a very creamy puree.


Tips

The spices in this mash can be varied greatly. It’s also delicious with just ghee, salt and a touch of black pepper.

If you don’t have ghee on hand, or you prefer not to eat it, substitute a high quality organic cold-pressed olive oil.
