Carob Surprise Cookies

In order to keep our agni happy and balanced, we recommend to avoid snacking in between meals. However, this doesn’t mean you have to give up sweet things all together. In fact, madhura rasa - sweet taste - is important for building ojas and helps to balance vata dosha. These surprise cookies are filled with a delicious blend of dates, tahini and carob powder. A perfect combination with dinner. 

 

Augmenting and extractive

SERVES: 6
PREPARATION TIME: 45 minutes
YOU’LL NEED:

Dough

  • 1 ½ cups wheat flour and ½ cup brown rice flour
  • ⅓  tsp. mineral salt
  • 1/2 tsp. ginger powder
  • 1/2 tsp. cinnamon
  • 3-4 Tbsp. ghee
  • ⅓-½ cup warm water

Filling

  • ⅓ cup chopped dates
  • 1 tsp raw carob powder 
  • 1 ½ Tbsp raw tahini
  • Hot water to make a smooth paste 
     

    HERE’S HOW:

    1. Mix the dry ingredients together.
    2. Add the ghee, salt and water and make a dough. Set aside.
    3. Blend the filling ingredients to create a paste. 
    4. Divide the dough into 6 balls on the baking tray and press a thumb sized indent into each. 
    5. Place the filling in the holes and close the dough over the top.
    6. Bake at 375 F or 190 C for 15-20 minutes or until golden and soft.



      TIPS & SUBSTITUTIONS:

      • Change wheat flour for spelt flour and rice flour for barley flour for a different texture
      • Grind walnuts into the paste for a different taste 
      • Add raw brown sugar or jaggery to the dough for additional sweet or add honey on top of the whole cookie after baking
